I don't think you can. After you've done that full map thing, you can't have more. Though you could use more than one map and then switch between them if you go to something like a door.
You CAN make bigger maps, but the built-in map editor only exposes a fixed size. IMO it's not a great editor, it only does the absolute minimum of what it has to do and is missing a good amount of features.
