how does one change text color?

To change text color in a program, I think you use "COLOR 0,X", with X being the number that represents the color you want (I think there's a guide somewhere in the help manual).

If you type COLOR and press the small blue [ ? ] button on your keyboard, it shows a guide on how to use the COLOR command.

COLOR has two arguments. The first stands for text color, and the second stands for BACKGROUND color of text. The second is the optional argument.
